Our Three Eclairs, and Why We Haven't Added a Fourth

An eclair looks simple — a strip of choux pastry, split and filled, glazed on top — but the choux has to be baked just right, dry enough inside to hold the cream without going soggy in an hour. We keep our eclair line to three flavors: Chocolate, the one most people order first; Caramel Vanilla, softer and less sweet; and Hazelnut, the newest of the three and the closest we get to a praline flavor in this format.
We've thought about adding more flavors over the years, but an eclair only works if the choux-to-cream ratio is right, and every new flavor means re-testing that balance from scratch rather than just swapping a filling into the same shell. For now we'd rather keep three eclairs we're confident in than stretch to six and lose consistency on any of them.
Eclairs are sold individually at all La Paris shops and travel well for a short trip, but like most choux pastry they're best eaten the same day rather than kept overnight.
